Brown Butter Banana Bread

makes 1 loaf

Ingredients
  

Wet Ingredients:
  • 3 ripe Bananas
  • 3.5 oz yogurt, plain Greek or Icelandic
  • 1 stick butter browned
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs room temp
  • 1 tsp vanilla
Dry Ingredients:
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1/2 - 1 tsp cinnamon
  • 1/2 - 3/4 cup toasted pecans chopped

Method
 

  1. Preheat oven to 350F and grease a loaf pan.
  2. Place bananas and yogurt in a blender and blend til smooth
  3. To the banana mixture add the browned butter, eggs, sugars, and vanilla. Blend to combine.
  4. In a large mixing bowl sift together: flours, baking soda, baking powder, salt, spices, and nuts.
  5. Pour banana "smoothie" into the mixing bowl with the flour and stir to combine. Making sure that you scrape the bottom of the bowl for dry "pockets" of flour.
  6. Scrape batter into prepared loaf pan.
  7. Bake for about 50-60 minutes or until a knife/toothpick/skewer inserted into the center of the loaf comes out clean.
  8. Turn bread out of the pan and let cool on a wire rack.
  9. Share (or hoard) and enjoy!
